If you are looking for delicious and healthy food definitely take the time to visit Cafe Gratitude. It is an entirely vegan and organically sourced restaurant. They offer a wide variety of non-vegan alternatives, however even for the traditional eater there are delicious options that are worth the jaunt over there.
I recently had a basil strawberry cheesecake (non-dairy) with a cashew/almond crust that was to die for. So creamy and light while overwhelming the tastebuds with flavor. A must visit.

The Boulevard Brewing company is a local brewery founded in 1989. It has an expansive offering of brews, which are amplified when you visit the brewery. The individuals at the brewery are knowledgeable and friendly. They recently opened up a new building with new bar and food menu that is yummy and worth checking out. Also they have an awesome view of downtown KC!

Parks & Nature
This is a lovely trail in a town called Parkville maybe half an hour from our Apartment. Parkville itself is a cute little down with a lovely and walkable downtown area. The hiking trail is a short and approachable hiking experience for all ages and types that has various scenic views such as a nice waterfall and a wonderful overlook of a valley. Definitely worth checking out.

Shopping
This is a wonderful and massive Antique shop down on the River Market. They boast a multi-level shopping experience and they are not joking. I hesitate to call this a market only because after two hours delved into wild antiquery it almost feels much more like a museum.
The experience there is marvelous. They have so much stuff that you never want to stop. I want to point out though that the people there are why to go. Non-stop were the employees checking in on us, helping us, grabbing things out of our hands and putting it by the register so we didn't have to hold them. Truly delightful.

Essentials
Definitely check out the available times to make sure it is open when you want to go, but KC sports multiple notable farmers markets that offer local organic ingredients at good prices from good people. Brookside, Old Overland Park and the River Market all have great farmers markets worth checking out even if just for a glass of homemade Kombucha.
