If you have seen the documentary Jiro dreams of sushi, one of the chefs on that documentary (the apprentice who kept trying to make the perfect egg dish), owns this restaurant. The sushi as you would expect is phenomenal.
Seattle’s long history of Japanese travelers and residents is distilled in this market-adjacent restaurant of unparalleled elegance and simplicity. Shiro Kashiba is Seattle’s foremost sushi purveyor, and this, his upscale arm (Shiro is the other), is the finest sushi in town. Fun fact: Kashiba trained under the Michelin-starred Jiro, of Jiro Dreams of Sushi-fame. We’ve put ourselves in the chef’s capable hands for the omakase, and have come away astounded every time at both the dynamic surprises and the perfect classics

The best sushi this side of Tokyo! If you’ve seen the documentary Jiro Dreams of Sushi, the head sushi chef is one of Jiro’s apprentices featured in the movie. This is a place to experience the real art of sushi. I recommend sitting at the bar so you can watch them work and order the full chef’s choice dinner.
