When you arrive, you get in line to order then hope there is a table or booth available, or maybe outdoor seating, since they are usually busy finding a seat may be tough. You get a number then your food is brought to on a tray lined with butcher paper. They tables have four kinds of sauce, sweet bbq, vinegar based, mustard sauce and a very spicy sauce.
