PUJOL $$$$$ To experience Mexico’s culinary past and future (sometimes in the same dish, as in the “mole madre, mole nuevo”—a fresh mole atop one that’s been fed sourdough-starter-style for almost three years and counting). This spot is the flagship of Enrique Olivera, a bona fide celebrity in Mexico; alumni have gone on to start many of the country’s most acclaimed restaurants. Pujol moved into a sexy new space in early 2017 but already feels well lived-in. Open Monday to Saturday, 1:30 to 4 p.m. and 6:30 to 11:30 p.m. Closed Sunday. Reservations all but required a month or more in advance for primetime. Allow at least three hours for the full meal.

Chef Enrique Olvera—the celebrity chef behind New York's Cosme—offers two different dining options at his highly acclaimed Pujol: a multi-course tasting menu in the formal dining room and a "taco omakase" meal at the low-slung bar featuring various tacos, antojitos, and botanas. You'll likely get to taste Olvera's famed mole madre dish no matter which you choose, it'll just be in taco form at the bar. The kitchen is run by top Mexican chef, Enrique Olvera, and Pujol is considered one of the top 50 restaurants in the world by some publications. The Wall Street Journal rated it as the top restaurant in Mexico City a few years ago. Needless to say, book in advance! It’s in the Polanco district so it’s a taxi ride away.
